Grilling season is officially on and it’s time for burgers, sausage and kebabs. But while you’re at it, make some room on the grill for fresh vegetables. Here are some tips for making perfectly grilled eggplant, zucchini, mushroom and red peppers.

First off, you want to make sure you have thick slices when grilling eggplant or summer squash. If they’re too thin, they’ll get mushy and will be harder to manipulate with your grillin’ tools. If you’re dealing with peppers, I’d say grill them whole, then let them cool before removing the seeds. Some people like to remove the skin of the peppers as well, but I don’t recommend it because you’ll lose a lot of the char-grilled flavor. If you’ve got mushrooms, you’ll want to stick with portabellos since they’re big and meaty. Otherwise, you’ll have a lot mushroom casualties falling through the grate.

Next up, marinate for the best flavor. I like to mix some oil, vinegar or citrus juice and fresh herbs with salt and pepper and let the vegetable slices marinate for at least 2 hours, even overnight. The marinade will prevent them from sticking to the grate will give you more flavorful results.

Controlling your temperature is also very important. For quick-cooking summer squashes and eggplant, high heat is fine, even preferable so that you’ll get a nice char. For mushrooms, stick with medium temperature, but don’t overcook them. More on that in a minute. You’ll want to keep the heat on medium-low for peppers until they’re tender, then up the heat to high until the skin blisters.

Finally, don’t overcook your vegetables. You want them to be slightly browned, charred in places and have nice, defined grill marks. This means resisting the urge to move them or flip them constantly. Just throw them on and flip them once halfway through. For eggplant, summer squash and mushrooms, 3 - 4 minutes on each side is plenty. Peppers will need a bit more time, 6 minutes on each side, plus 1 - 2 minutes over high heat.

new look, new software, commenting!

I finally upgraded my Wordpress software from 1.5 (embarrassing, I know!) to 2.3.2! Hooray!!! What does it mean? It means searching is easier, posts can have tags, people can comment (woo!) and I can add more “fun” stuff over time. It’s also got a new look, which I like today, but will probably hate tomorrow.

Still customizing, but it’s a start…

UPDATE: I don’t know why the links in the posts are orange. There’s no orange color in any of the stylesheets. WTF?

When I think about this past year, I can’t imagine how I crammed everything into 365 short days. So, what did I do in 2007?

Well, for starters, I packed up my life in NYC and moved to back to Miami (it was actually December 28th, 2006, but we’ll fudge it), something I swore I’d never do. Tom soon followed and he developed a nice tan and a deep affection for linen and flip flops.

On the second day of the year, I started my new job as Production Manager at AgencyNet. I’ve learned quite a few things this year, including that I absolutely love commuting to the sweet sound of an audiobook (to the absolute shock of the bookworm in me).

In February, Favaunt eloped in San Diego where Tom and Eliz witnessed the occassion, and we drove out to see La Jolla and its lounging sea lions.

In March, my mom threw me a bridal shower and we attended the Sony Ericcson Open. Serena Williams won and we downed a pitcher of Mojitos.

April was a whirlwind of favor wrapping, invitation lists and RSVPs.

On May 5, 2007 I married my best friend. It was the very first humid day of the summer and we had steak and sea bass and champagne. After the wedding it was off to Hawaii for 2 weeks of hiking and sunning and 17.2 miles of kayaking.

June brought house hunting and mortgage approvals, offers and failed contracts. Toward the end of the month we found our perfect place and made an offer. We signed the contract on the 4th of July on the beach in our bathing suits and with beers in hand.

July, August and September were a mess of countertops, tiles, backsplashes, cabinets, flooring and more tiles.

Diana and Jon were married in Maryland in June; Lisa and Lang made it official in Boston in August.

We closed on our first home on Oct 3, 2007. We ripped out the plastic drop-ceiling in the kitchen that night while we drank champagne and ate pizza. By the end of the weekend, we had torn out the cabinets, removed walls and wallpaper. It was chaos.

In November we painted and cleaned and repeated the process 23 times over. Meli & Augi got married on November 17, 2007. Tom and I spent our first Thanksgiving together at my house where we stuffed ourselves with butternut squash lasagna, bacon-wrapped turkey and apple pie galore.

Our new home was finally complete on December 3, 2007 and we were able to move in exactly two months after we closed. I am fascinated by our first home.

We just got back from a cold and snowy Christmas in Michigan, where we ate twice baked potatoes and beef tenderloin and the best Christmas cookies of all time.

2007 was an amazing year for me and my family, but I can only hope that 2008 will be a little less hectic. Next year I plan to write my first cookbook, renew my tan and cycle at least once a week. These aren’t my resolutions. They’re merely things I’m looking forward to doing in the new year.

first home

new place

It’s been 2 months since the day we closed on our first home. That’s 64 days of tearing out walls, scraping wallpaper, paining, cleaning, painting and I’m still cleaning. But, we’re finally in our first place. Not that it would’ve happened without the man hours our families, and especially my dad (Project Manager Extrordinaire) put in during those 64 days.

64 days of trash removal, garbage dumping and toilet smuggling. Of neighbors so angry, nosy and obstinate that they made us crazy.

64 days of headaches, sore muscles and stress. So, was it worth it? Hell yes.

I love my first home.

whole foods comes to miami!

They’re finally opening a Whole Foods in Miami! It’s one of the few things I’ve really missed about New York. The Fresh Market doesn’t even compare. Now I can get pomegranate molasses, harissa, and all sorts of whole grains and flours. My mom has tomorrow off, so she’ll be there promptly at 9AM for the opening. I’ll be jealous…

Yesterday I tried to make red velvet cupcakes with mascarpone/cream cheese icing. I say that I tried, and I guess one could say that I succeeded because I did, in fact, produce cupcakes. But they weren’t what I wanted. The cake was too greasy, the icing not stiff enough. Everything was just so eh, when red velvet cupcakes should be anything but eh. Red velvet cupcakes should be everything but eh. But, eh they were. And my faith in nytimes.com recipes in somewhat diminished. I’ll try again at some point — with less oil in the cake batter, less whipped cream in the icing.

On a side note - do you know how much food coloring a red velvet cake requires? NINE (that’s 9!) little bottles. Am I the only one that finds that absurd? Granted, the 1 bottle I used barely changed the color of the cupcakes, resulting a slightly reddish brown hue. But, still, nine is ridiculous.

Discouraged from sweets, I’ll soon try baking a cheddar jalepeno bread that’s in this month’s Gourmet. Hopefully, with better results.
